1 tablespoon vegetable oil<br />
3 cloves garlic, minced<br />
1 cup chopped onion<br />
1 cup chopped carrots<br />
1 cup chopped green bell pepper<br />

2 tablespoons chili powder<br />
1 1/2 cups chopped fresh mushrooms<br />
1 (28 ounce) can whole peeled tomatoes with liquid, chopped<br />
1 (15 ounce) can black beans, undrained<br />
1 (15 ounce) can kidney beans, undrained<br />
1 (15 ounce) can pinto beans, undrained<br />
1 (15 ounce) can whole kernel corn, drained<br />
1 tablespoon cumin<br />
1 1/2 tablespoons dried oregano<br />
1 1/2 tablespoons dried basil<br />
1/2 tablespoon garlic powder</p>
<p>Directions</p>
<p>1. Heat the oil in a large pot over medium heat. Cook and stir the garlic, onion, and carrots in the pot until tender. Mix in the green bell pepper and red bell pepper. Season with chili powder. Continue cooking 5 minutes, or until peppers are tender.<br />
2. Mix the mushrooms into the pot. Stir in the tomatoes with liquid, black beans with liquid, kidney beans with liquid, pinto beans with liquid, and corn. Season with cumin, oregano, basil, and garlic powder. Bring to a boil. Reduce heat to medium, cover, and cook 20 minutes, stirring occasionally.</p>

1/4 cup chili powder<br />
1 tablespoon ground black pepper<br />
1 (15 ounce) can kidney beans, drained<br />
1 (15 ounce) can garbanzo beans, drained<br />
1 (15 ounce) can black beans<br />
1 (15 ounce) can whole kernel corn</p>
<p>Directions</p>
<p>1. Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.<br />
2. Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, and continue cooking 5 minutes before serving.</p>

• 3 Tablespoons olive oil<br />
• 1 1/2 cups chopped onion<br />
• 8 large garlic cloves, chopped<br />
• 2 19 oz. cans red kidney beans<br />

• 1 envelope taco seasoning or 1/4 cup taco seasoning<br />

• 1 15oz can tomato sauce<br />
• 3 cups chicken broth or vegetable broth<br />

<p>Vegetarian Chili Directions</p>
<p>Heat oil in heavy saucepan over medium-high heat. Add onions and garlic.  Saute about 8 minutes or until onions are translucent.  Add beans, taco seasoning, basil, oregano, and thyme.  Stir 2 minutes.  Mix in tomato sauce, chicken broth and tomato paste.  Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 1 and a half hours.  Season to taste with salt and pepper.  Refrigerate until cold then reheat over low when ready to serve.</p>
